How to Make 3-Ingredient Crockpot Chicken Tacos

Introduction


If you are a busy mom, like myself this recipe will indeed be one of your go-to meals. It doesn't get any easier than this one.


Ingredients Needed

  • 1 package of chicken breasts (3-4)

  • 1 packet of taco seasoning

  • 1 jar of salsa (we love the Pace Medium salsa for this meal!)

  • Optional: lettuce, shredded cheese, sour cream, tomato, cilantro, jalapenos

  • Your choice of flour or corn tortillas (we also love this over chips as a quick nacho plate)



Preparation Steps


  1. Start by placing the chicken breasts in the bottom of your crockpot. If they overlap a little it's okay, they will still cook all the way through.

  2. Sprinkle the taco seasoning over top of the chicken.

  3. Dump the whole jar of salsa on top of the taco seasoning

  4. Turn your crockpot on high for 2-3 hours or low for 4-6 and let it sit.

  5. Once the chicken has finished cooking use a fork (or chicken shredder) to shred the chicken. Stir the chicken into the salsa mixture and turn the heat to keep warm.

  6. Allow the chicken to sit for 10-15 minutes and absorb the excess liquid from the mixture.

  7. Spoon your desired amount of chicken into a tortilla and top with your favorite toppings.



Personal Experience


We absolutely love this quick and low prep meal. One of my favorite things about it is how we can easily double the recipe and use it for several days. See below for some of the variations we use this for. Hint - It can also be stored in the freezer to use at a later time.


Variations and Additions


If you're looking to make this recipe your own I would suggest adding some cilantro and onion to the mix. The cilantro pairs well with the chicken and gives this dish just a little something extra.


Suggested toppings:

  • Shredded cheese

  • Sour cream

  • Lettuce

  • Pico

  • Lime juice

  • Avocado


Leftovers? Try serving the chicken mixture over cooked rice or on tortilla chips for a different take on this simple dinner.
