Easy Week Night Meal - Baked, Sheet Pan Chicken Fajitas



I'll be the first to admit, I love a great fajita taco, but dragging out the grill on a week night after working all day is not always efficient or practical. This method of making fajitas is not only super easy, but it's also a big hit with my family! - 100% kid and husband approved!


Prep Time - Approximately 15 minutes

Cook Time - Approximately 35 minutes

Easy Sheet Pan Chicken Fajitas

What You'll Need

  • 1.5 Pounds of Chicken Breasts

  • 3 Bell Peppers - I prefer one red, one yellow, and one green

  • 1 Large Yellow Onion (or 2 small) - You may substitute white or red onion for yellow, but my preference is yellow.

  • 1 Packet of Fajita Seasoning Mix

  • 2 Table Spoons of Olive Oil

  • 1 Lime

  • Flour or Corn Tortillas

  • Optional Fajita Toppings: Sour Cream, Salsa, Shredded Cheese, Cilantro, Avocado, Jalapeños

Instructions

  1. Preheat the oven to 410°F

  2. Cut your onion and bell peppers into 1/4 inch slices. Place in a large mixing bowl.

  3. Slice the chicken into thin strips and add them to the mixing bowl with the peppers and onions.

  4. Drizzle the olive oil over the peppers, onion, and chicken. Empty the fajita seasoning into the bowl and toss until the chicken and vegetables are well covered.

  5. Spread the mixture onto a baking sheet (or in a baking dish) evenly.

  6. Bake the chicken and vegetables for about 30 minutes, stirring half way through. - About 5 to 10 minutes before the chicken and vegetables are done baking you can wrap your tortillas in foil and warm in the oven. Be sure your chicken is cooked throughly before serving. If you want your vegetables browned a little - turn on the broiler for about 3 to 5 minutes before removing them from the oven - watch carefully, so they don't burn!

  7. As soon as you remove your chicken and vegetables from the oven squeeze the lime juice over your mixture.

  8. Serve on tortillas with your favorite toppings!
